Carrot Soup with Tarragon, Ginger and Toasted Pepitas: Private Chef-ing By the Book with Seamus Mullen

Funny story:

Last April I was soaking my arthritic bones in a deep bath full of Epsom salts and essential oils, melting away the wet of Spring, with Seamus Mullen’s soon-to-be-released Hero Food cookbook. I was interviewing Chef Mullen for my column on Serious Eats NY, and the book had been messengered over for my research. As I flipped through the intro, I was flabbergasted: Seamus has rheumatoid arthritis, a chronic immune disease that manifests with symptoms and patterns similar to my own with Lyme. I jumped out of the tub, threw on a robe and, dripping, held the book up to my roommate, with a “you’ll never guess what this cookbook is about!!”

Which was an unfair proclamation.

Because while, indeed, Chef Mullen battles RA, the book isn’t about that. It’s about delicious food that also happens to be good for you.

When I was first diagnosed with Lyme Disease at 12 years old, massive amounts of antibiotics weren’t cutting it. I couldn’t walk for a long period, I couldn’t eat, I attended school sporadically when I could, and in general my brain and body were in Lala land seemingly without end. It wasn’t until my mom found a nutritionist who put me on a strict diet, lots of supplements and IV vitamin drips that my immune system got so strong that my symptoms went away – relatively speaking – even though the Lyme did not.

Growing up with Lyme – including dealing with two serious flairs again in adulthood – taught me a lot about food. There were many I had to avoid – some incredibly strictly during certain periods but in moderation in others – and some that to this day I can’t touch. But there were also some that I needed to load my diet with so that my digestive tract, immune system and joints had a bit of extra help.

Seamus calls them hero foods.

Two decades later, I’m a private chef in a household with no dietary restrictions. Actually, I call myself a “private cook”, because a chef I am not. I am adept at making delicious things and, yes, can cook without guidance. But for inspiration and to widen my skill-set I often take advantage of my job and bring favorite books I want to explore to work with me. And as my blogging time has been diminished by my cooking, interviewing and event-covering time, I figured I should let my professions overlap when possible.

Hence this new series, “Private Chef-ing By the Book”.

It’s fitting that I’m starting with Hero Food because this time of year I’m back in the tub often. My job is physical, and I have to medicate, soak and sleep more often to battle the pain it brings my joints. 

Just reading through Mullen’s Spanish-based recipes brings me comfort; not only do I love the ingredients he focuses on (olive oil, almonds, anchovies, good eggs, good birds, parsley etc.), but reminding myself why they’re healing for me helps me connect more intimately with them, reminding me to give them more attention when I’m frantically cooking in someone’s kitchen.

In Hero Foods this carrot soup is made to celebrate summer, with gorgeous fresh carrots and a splash of citrus. But since it’s chilly and damp in NYC I’ve made a few tiny adjustments. In the original recipe Chef Mullen blanches the carrots: I’ve chosen to roast them. He tops his with yogurt: for my boss-family I stirred some creme fraiche in instead, and for my holiday dinner-party I’ll serve it with tangy goat yogurt so I can enjoy it too. And because it’s autumn now in New York City, I toasted some pepitas and tossed them in cinnamon and a pinch of sugar to sweeten the deal a bit. I adjusted some ingredients a tad and served the soup hot rather than chilled.

This soup is delicious. I’d never thought to add orange juice or zest to a carrot or squash soup, and it brightens and enlivens the rooty vegetables. Streaming in olive oil at the end emulsified it to a smooth cream. And not using chicken stock – which is my go-to for adding flavor and depth – really let the carrots remain the star and the gentle garlic, ginger and tumeric do the flavoring. And while I love tarragon and use it often, serving it on top rather than blending it in as I usually do helps it stand out rather than meld with a pluthera of equally-amazing flavors.

I’ve cooked from Chef Mullen’s book a few times already. And on top of the deep flavors I’ve created, it’s given me mindful time in the kitchen with ingredients that should be constantly in my rotation. Soon I’ll be pickling mushrooms to add to my cheese plate and pan-roasting Brussels sprouts with some (Portuguese… sorry Mullen) chorico for Thanksgiving. At work next week I’m going to make his tender lamb meatballs in a gentle tomato sauce and ricotta. And when the weather warms up again, I’m going to utilize the grill in my boss-family’s summer home to do more smoking, which I can’t do in my tiny NYC apartment.

Carrot Soup with Tarragon, Ginger and Toasted Pepitas

Based on Seamus Mullen’s Chilled Carrot Soup with Yogurt and Tarragon from Hero Food.
Serves 4-6 depending on serving sizes

Ingredients:

2 lbs carrots, peeled and cut into 1″ chunks
1/2 cup olive oil (the book specified Arebquina, which happens to be what I had on hand!)
2 shallots, finely diced
2 cloves garlic, finely diced
2 Tbsp apple cider vinegar
Zest and juice of 1 orange
1/4 tsp whole tumeric
Kosher salt Freshly ground black pepper
Creme fraiche, if desired, or whatever yogurt you can digest (or omit completely to make vegan)
About 4 tarragon fronds or 2 Tbsp coarsely chopped tarragon

For the Pepitas:

Note: Thanks go to Chef Anthony Ricco at The Spice Market, NYC, for this pepitas idea. He serves it on an incredible sweet butternut squash soup that I’ll be for Thanksgiving. His interview coming up in a few weeks on Serious Eats.

1/4 cup pepitas (small hulled pumpkin seeds)
1 Tbsp olive oil 1/2 tsp cinnamon
1/2 tsp sugar, if desired

Directions:

Heat oven to 375°.

Combine carrots and about 2 Tbsp oliver oil on a large baking tray. Sprinkle with salt, cover loosely with foil, and roast for about 30 minutes, until almost steamed and completely soft, and slightly browned on bottom. Remove to cool slightly.

While the carrots are roasting, prepare the pepitas: place pepitas and olive oil in a cold skillet and place over medium/high heat. As the temperature starts to rise stir and then start tossing until they crackle, pop and expand. When they’re equally lightly browned and full in size, remove quickly to a bowl. Toss with a pinch of salt, cinnamon and sugar (if desired – you don’t need to).

Meanwhile, heat 1 Tbsp olive oil in a skillet on medium heat. Add shallots, and cook to sweat, 1-2 minutes. Add garlic and toss quickly to warm and slightly sweat, about another minute more.

Place cooked carrots, shallots, garlic, vinegar, orange juice and zest, tumeric, and ginger in a blender, food processor or large pot (and use a hand blender). Start running the blender on high and slowly add warm water until you get to the “velvety” consistency you desire, about 2 cups. Reduce the speed of your blender/mixer, and stream in about 1/2-1 cup olive oil until emulsified and gorgeously smooth.

Adjust taste with salt and pepper, and add more acid from vinegar or orange if desired.

Pour into serving bowls and top with a dallop of creme fraiche / yogurt, a few fronds of tarragon, a swirl of olive oil and some toasted pepitas.

Happy Thursday Dusty Readers.

At 3:30am I woke up and music started running through my head and I couldn’t fall back to sleep. Mitra shimmied her way up the sheets, rested her head on my arm, contorted her body in the way dogs do when they demand a rubbed belly, and proceeded to snore in my face, once again proving that dogs are often more logical than humans in that when they feel something, they act on it.

I felt tired, but couldn’t fall back to sleep.

Then this video popped in my head. An hour later (after I had turned on my window fan, expelled the streetlight glow with the lowering of a blind, tied up the hair that was making my neck warm on my pillow and checked my email on my iPad) I was still awake. And while I didn’t run to the kitchen to make beer brownies at (now) 4:30am (though I’m pretty sure all of these things are in my cupboards), the recipe and this video were on the brain.

Because around a year ago I made a series of five demos for what I was/am calling The Dusty Baking Show. It was a project mulled over with an ex-boyfriend who is an incredible filmmaker. And when we broke up I was determined to make the demos anyway and not let a little heartache stop my work from progressing in a positive direction (it didn’t – a little dust in the heart is good for productivity).

Looking at it now, I wish I’d maybe put a little more makeup on. Or gotten a touch more sleep before shooting. Or pointed out that beating eggs and sugars together isn’t “creaming” when your fat is bubbling away on the stove.

But I also sorta don’t. Because my intentions with musing on what my presence could be with gluten-free baking on film was primarily to be accessible. To look like me on any given day when I’m typing at my computer in my room and don’t need to be all makeup-y and put together. To not edit the silly things I say in my kitchen (and silliness evidently happens a lot in 7 minutes).

A year after making this video, food is my day-to-day way of making a living, whether I’m writing about it for Easy Eats or Serious Eats, or in a fancy kitchen as a private chef. But re-watching this while New York City sleeps reminded me of why I love it most when barefoot, in my kitchen, with a few ingredients and a little inspiration. This recipe was originally titled Boyfriend Breakup Beer Brownies because I made them on the spot for Lil’ Sis when she had literally just gone through a breakup and I happened to be home. I didn’t use a recipe, just grabbed from the pantry and went to it. A few weeks ago Lil Sis moved south – I wish I could say “moved south for the winter” – and part of me wishes she were here, at 4:53am, so we could head into the kitchen together and make brownies.

Boyfriend Breakup Beer Brownies (Gluten Free)

Ingredients:

  • 8 Tbsp / 1 stick unsalted butter
  • 10 Tbsp cocoa powder
  • 1 cup all-purpose gluten-free flour (I used Bob’s Red Mill in the original incarnation and now use this as my go-to brownie flour blend: 1/2 cup brown rice flour, 1/4 cup quinoa flour, 1/4 cup arrowroot starch, 1/2 tsp xanthan gum)
  • 1 Tbsp mesquite flour (optional)
  • 1/4 tsp salt
  • 2 eggs
  • 3/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/2 cup dark gluten-free beer (Green’s Double Dark rocks my world)

Preheat oven to 350°. Grease 8″ square pan.

In a small bowl, whisk together flours and salt.

Melt butter on stove. Whisk in cocoa powder. Turn off heat and allow to cool slightly.

In the bowl of a standing mixer fitted with the whisk attachment, or in a large bowl with a hand mixer, beat together eggs and sugars on high speed for about 1 minute. Add beer (and drink the rest from the bottle, no matter the time of day) and beat for about 30 seconds until frothy. Slow mixer to medium and beat in melted cocoa/butter ingredients.

Stop mixer, add in dry ingredients, and beat until incorporated.

Bake for about 25 minutes, until the center of the pan is slightly fudgey but the outsides are firm. Cool for 10 minutes before slicing and devouring, preferably while watching a really funny movie.

Gluten-Free Pork Rind Compost Cookies – A Recipe Swap

North Carolina Pork Compost Cookies

I had two things to accomplish with only a few hours in my kitchen; bringing a gluten-free sweet treat to my sister’s going-away picnic (she’s moving to North Carolina AND THAT DOES NOT MAKE ME HAPPY) and a take on this recipe:

Christianna over at the Burwell General Store really threw me for a loop with this one. Every month for over a year now (in my case) she’s zipped along a vintage recipe to a group of bloggers that I adore. I try to stick relatively close to the original recipe, keeping it in line with the kind of dish (savory, sweet, breakfast etc.) and keeping the prominent flavors included somehow.

But… pork, fruit and cake?!?!

I stewed for a few days and, in Dusty fashion, left this to be done the day before posting with only a couple of hours in my kitchen. But I awoke that morning with a revelation:

It was time to call in a Compost Cookie.

I trotted over to the corner store with Mitra and started grabbing gluten-free snacks and… pork rinds.

At home I opened the bag and – tentatively –  ate one.

Um… I’m not quite sure I get the allure. But they totally worked in the cookies, subtly adding some earthy saltiness and helping to balance a bit of sweet. I used dried dark cherries as my fruit and starting tossing other corner-store finds and pantry staples: chocolate chips, slivered almonds, coffee, oatmeal, potato chips, kettle corn, frozen leftover chocolate cake crumb (from Chocolate Chocolate Cookies).

They were polished off at the picnic. My family indulged, my gentleman friend ate three, and they really satiated sweet/salty cravings. They’re intense – I could only have a few bites. But once again I’ve found the basic Compost Cookie recipe to be a winner.

And the best thing about Compost Cookies are they’re really a grab-and-go experience in your pantry. So take the gluten-free cookie base and weight proportions and go hog wild*!

Gluten-Free Pork Rind Compost Cookies

Built around the Compost Cookie by Christina Tosi
Makes about 20-24 cookies

I both weigh and measure my ingredients, based on which is necessary or more accurate.

Ingredients:

  • 2 sticks of unsalted butter, at room temperature
  • 1 cup white sugar (I used palm sugar)
  • 2/3 cup light brown sugar
  • 1 Tbsp corn syrup
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 75 g brown rice flour
  • 75g arrowroot starch (or tapioca starch)
  • 50g millet flour
  • 25g white rice flour
  • 3/4 tsp xanthan gum
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp salt

Compost Ingredients (totaling 475 grams)

  • 150g chocolate chips
  • 100g slivered
  • 40g gluten-free old fashioned oats
  • 5g decaf coffee / espresso grounds
  • 40g potato chips
  • 60g chocolate cake crumb (like a crushed chocolate cookie or brownie)
  • 25g kettle corn
  • 30g dried cherries, chopped
  • 25g pork rinds, crushed to various sizes

Directions

In the bowl of a standing mixer with the paddle attachment, cream the butter, sugars and corn syrup for 2-3 minutes. Scrape bowl.

Add egg and vanilla and beat on medium/high speed for 7-8 minutes. This step is vital in getting the sugars and fat to combine ideally, and will help the cookies not over-spread.

Meanwhile, weigh out flours, baking powder, baking soda and salt. Whisk together.

Turn mixer on low and add flour mixture until just incorporated, under a minute.

Add all compost ingredients on low except for potato chips, and mix until just combined. Fold in potato chips, trying not to break them.

Roll out onto parchment or Silpat lined sheets. Wrap tightly in plastic and refrigerate for at least 1 hour (this, again, is vital to them not spreading too much).

Heat oven to 375°. Bake each sheet individually for 18 minutes, or until the outsides are just starting to brown but the middles are soft. Cool on pan for a few minutes before removing to rack to cool completely.

String Bean and Arugula Salad with Macadamia Nut Dressing and Marcona Almonds: Summer of Salads (and private chef musings)

I’m in a relationship with a blue beach chair.

That is, I think it’s blue.

I’ve only met it at night, at 9pm at the earliest.

It’s one of many tucked under a long wooden walkway from the street across from the house where I work as a private chef (or private cook, as I prefer to call myself based on my skills compared to the chefs I interview for Serious Eats).

It could be green, for all I know. Or gray or black.

All I know is that it has a comfy headrest, and leans me back to the perfect angle. And, despite the dozens of chairs left by trusting locals and ready to be reached for, it’s the one I always grab, no matter where it’s ended up on the line.

I work for a good family, for which I’m very grateful. They have a beautiful home, and are respectful of who I am and what I do, which includes providing three healthful and impressive meals a day for a variety of diets put forth by themselves and their constantly rotating houseful of guests (they are very generous hosts). There are times I’m overwhelmed by the work – by the very early mornings and long days, by the constant focus that is timing food and constantly producing a creative variety of food. Some days it feels like just too much.

There have been a few moments I’ve sunk to the kitchen floor in exhaustion. And many moments when I’ve calculated the days until I can drive home to NYC and be in my own space, with my dog and my kitchen and my roommate and my desk and my dirty laundry and my neighbors and my bed!

But, no matter the lovely guests, the frantic preparation or the random quiet moments when I drive on crowded summer Hamptons streets…

… the day always ends in that chair.

I fill my Starbucks insulated cup with whatever wine I’ve bought and stashed in the garage fridge and throw on comfy clothes and head across to the beach. I bury my toes in the cold sand and look up at the cloudy/clear sky with the warm/cool breeze blowing on me, nestling into that blue/green/black/gray chair.

That chair has seen me through some medical shit I won’t go into. And through thinking I’m not worthy of this job. And through thinking I’m worth more than my salary. And through thinking that this job and me are actually quite fit for each other. And through thinking about him/her/it/them/there. And through long phone conversations, songs on repeat in my headphones and moments of quite contemplation when I just stare out at the crashing waves and have to trust that I’m where I’m supposed to be in that very moment.

For my birthday I was given a journal with many of the menus and odd stories about my time here – relayed in texts to a friend. Soon I’ll add my own scribbled notes to it. And, at the end of the summer, I’ll reflect back on the skills I’ve learned, on the dishes I’ve made that I look forward to making for my own loved ones, on how awesome my warrior dog who has shuttled between homes in my absence was, and how I made it through the summer.

That time of reflection is still a bit away.

But, until then, at least I know I have my blue/green/black/gray chair to look forward to at the end of the day…

… and more dish discoveries yet to come… like this salad.

String Bean and Arugula Salad with Macadamia Nut Dressing and Marcona Almonds

Ingredients:

  • 1 package (about 5 oz) baby arugula
  • 1/4 lb French string beans
  • 1/2 large red onion, cut into thin half-moons
  • 4 cloves of garlic, smashed and chopped fine
  • 2 Tbsp + 1 tsp extra virgin olive oil
  • 3 Tbsp Macadamia nut oil (walnut or almond oil would work too!)
  • 1 Tbsp red wine vinegar
  • hefty pinch of kosher salt and a few healthy grinds of black pepper
  • 1/4 cup Marcona almonds (pistachios or pine nuts wouldn’t be the end of the world either)
  • 1 tsp herbs de Provence

Directions:

Place 2 Tbsp olive oil in a medium saucepan over medium heat. Add the string beans and cook until they just soften but before they brown, about 3 minutes. With tongs (one of my top five kitchen utensils), remove to a large bowl.

Add red onion and garlic, and cook until just softened, about 5 minutes. Remove to bowl.

Add almonds (or whichever nut is currently striking your fancy) to skillet, and toss them around a few times until they start getting all nutty and toasty. Add remaining tsp of olive oil and herbs de Provence and keep flippin em until they’re slightly browned and glossy.

In a small bowl, whisk macadamia nut oil, red wine vinegar, kosher salt and pepper until smooth and glossy-like.

Add arugula to bowl with warmed string beans, and toss to slightly wilt. Add dressing and toss to combine.

Pour into serving plate and garnish with almonds.

Chewy Gluten-Free Chocolate Chip Cookies

Post-post note! The day after this went live I was featured on America’s Test Kitchen for their Blogger Spotlight series! A few years ago my dear friend Thom turned me on to ATK and Cooks Illustrated in general, and I’ve come to refer to this incredibly knowledgeable source for any base recipe that I NEED to get right on the first try: basically they take a recipe and dissect it to the core, and then explain to you WHY certain combinations worked and others didn’t. I was honored, the day after my birthday, to be spotlighted by this incredibly well-known publication, especially with such an intro by their social media intern Belle Cushing.

Last night around midnight my dad woke me up to crack a huge bottle of champagne and have a chat in the backyard hot tub. I had literally just turned 31 – the age my dad was when he had me. We’ve renamed this occasion the “Better Champagne Birthday”. Climbing back into bed later after a text from my mom and a phone call with a good friend, I started mulling on the love in my life.

When I was 19, Ruark was the first man (of no familial relation) to say “I love you” to me. Or, at least, the first one of significance. It was New Years Eve of 2000/2001, and we were dressed formally and dancing at my parents’ house. Since then I’ve remembered every first “I love you” – where I was, if something as simple as making crepes inspired it, and how it felt physically inside of me to say and hear those words with someone for the first time. I remember this with all the men I’ve dated and all the women who’ve honored me with their friendship, giving their “I love you’s” so freely and fully that they’ve sometimes come for the first time at the end of a text or an email. The older I grow, the more weight those words carry. But a good weight – like a thick quilt in the dead of winter or stepping into a cool pool of water on a blistering summer day.

This week I was gifted with a new “I love you”. “I love you very much”, specifically. It caught me off guard. It was delicate, and genuine, and the kind of gift you want to wrap up and tuck somewhere safe.

I said “I love you” right back to this friend – and meant it – and the evening continued on, those words spoken and then left, sweetly, in the air. And then the next day they troubled me. And then the following day I found myself deeply introspective.

So I lay in bed in the first few hours of my 31st year thinking of “I love you”:

The way my father tells me – over and over again – that no one will ever love me as much as he does. The way my mother and I say it as we hug tight. The way my siblings and I say it easily and fully and often. The way Ruark and I end every phone call with it, still, though we’ve not been a couple for three years now. The way Lindsey’s “love you’s” have seen me through 15 years of growing pains. The way Abby ends a text with, “love you darlin”. Or Lyndsey’s “I love you’s” are so full and rich I feel her inside my heart though she’s hundreds of miles away. The way I now have to raise my voice to tell my grandparents I love them so that they can hear it. Or how I can say “I love you” over and over to Mitra, who doesn’t need words to know I do.

I was told recently that old souls say “I love you” first. I rarely have that courage, though I often say that them my head while holding tight or keeping a gaze. Once I’ve said them once, I want to say them again, and in any moment that feels significant.

But I think we often let fear stop us from expressing our love. Or at least I do. Not surface love or lust or social propriety, but real love and affection and attachment. Do we do this for protection or self-preservation? Or because once someone’s said “I love you” we immediately fear the day they’ll go away and we’ll be left to wonder what happened to that love?

And where does that love go once a relationship has ended? If we haven’t seen someone for a month, a year, a decade… where is that love?

Is it possible to love someone who said goodbye to me many years ago or to love someone who I’ve known for only a few months?

I guess the older you get and the more you experience, the more there is to chew on at 1:30 in the morning.

But, today, for me, love is everywhere. It’s in the people who, at some point on my birthday, will think of me with love. It’s in listening to the song that Ruark wrote me for my birthday last year. In wearing the pink chef coat that Erika gave me today. In flipping through the “Cook” Book that Dalane made me of all the menus and quirky texts I’ve sent him since starting my chef job out east.

It’s in Chewy Chocolate Chip Cookies. The new “I love you very much” person’s favorite sweet. I love making people’s favorites for their birthdays – cheesecake, Snickerdoodles, apple pies, brownies… they’ve been my way to say “I love you” when celebrating someone’s birth. Today, as I transcribe and clean and ponder on the conjunction of a few harmless, full words, I’m thinking “love” with butter, flour, and chocolate.

Chewy Gluten-Free Chocolate Chip Cookies

Makes about 18 cookies

Note: these are adapted from America’s Test Kitchen / Cooks Illustrated, which I find incredibly reliable when you want to nail something specific. They’re chewy and soft, but very sweet. In general I love subtle sweets, so while these are perfect for those who want bakery or Toll House-type cookies, don’t say I didn’t warn you if, like me, you prefer them with a bit of heft from nuts or oatmeal or almond butter. Sometimes love is baking outside your box.

Ingredients:

  • 10.5 oz gluten-free flour blend (mine was 6 oz brown rice flour, 3 oz. tapioca flour and 1.5 oz millet flour, more or less)
  • 1/2 tsp xanthan gum
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 12 Tbsp unsalted butter, melted and cooled
  • 1 cup dark brown sugar
  • 1/2 cup coconut palm sugar (or white sugar)
  • 1 large egg
  • 1 large egg yolk
  • 2 tsp vanilla extract
  • 1 cup dark or semi-sweet chocolate baking chips (regular or oversized, as I used here)

Preheat oven to 325°. Line two large cookie sheets with parchment.

Measuring out the flours in a medium bowl. Add xanthan gum, salt and baking soda. Set aside.

In the bowl of a standing mixer with the whisk attachment (or hand mixer), beat sugars and butter until thoroughly combined. Add egg and vanilla and beat until smooth and slightly fluffy. On low speed, add flour mixture until just combined. Fold in chocolate chips.

Scoop into balls (about 1/4 cup or smaller, depending on how you like your cookies). Crack a ball in half and then fit the smooth sides together, so the rough dough from the middle makes the edges rougher and gives more surface area for texture. Place at least 3″ apart on baking sheets.

Bake for 15-18 minutes, rotating halfway through, until edges are slightly crispy but centers are still soft.

Cool on baking sheets (this will help the insides continue to cook but the edges stop before getting too crispy).

Chocolate-Chocolate Cookies – Gluten and Dairy Free!

I’m missing shooting real photos with a real camera, instead of frantically with an iPad while I cook more in one day than I ever used to dream I could. Anyone have any suggestions for how to make photos from an iPad look awesome?!?!

Other than that bit of crankiness I’m pretty psyched by this Christina Tosi Milk Bar Cookbook recipe that Cassie of Bake Your Daypicked for today’s Milk Bar Mondays swap. Even before I baked these kids up, I knew that they were going to be crazy-awesome. And considering the time that goes into most Tosi recipes (the Apple Pie Layer Cake and Carrot Cake Truffles being two that spring to mind), these are relatively easy to make. And super awesome.

Being a cookie, it’s a simple matter of whipping together some fat and sugar, beating in some protein and more fatty yumminess, and then folding in gluten-free flours and starches and some chocolate crumbs.

Because, of course, a Tosi cookie has to have that little something extra. It has to have some crumb, crunch or liquidy addition to take it from “oh my dog yeah” to “save me from myself this is just too much yum in one cookie“.

Summer of Salads: Jicama and Watermelon

Jicama and Watermelon Salad

Every now and then, someone comes into your life and you breathe a huge sigh of relief.

One of those such special people made me a Jicama and Watermelon salad on the 4th of July. It went scrumptiously alongside some huge langostines I fried up all spicy-like and some ridiculously fresh sea bass that took a mere ten minutes to broil to perfection. He was all achy and sore from a pulled back muscle. I was exhausted from long days of cooking for other people. We feasted with white wine I had been saving for over a year for a special occasion – until I grew up and realized that every good meal with a good person is a special occasion. Then we climbed onto the roof and watched NYC’s spectacular fireworks burst over the Hudson river.

Then I stole his recipe.

I adapted it slightly for the family I cook for, and set it on the pink-canopied backyard table with some of my garden chicken salad and grilled burgers. By the time I got around to snapping pictures of it 24 hours later it had faded in color but the flavors had developed even more fully.

Jicama is a root that’s a cross between a water chestnut and rhubarb, believe it or not. Watery, slightly sweet and somewhat starchy, it’s often eaten in its native Mexico with fiery spices. Because of the light sweetness and water content, it pairs extremely well with watermelon, giving a salad of both some crunch and texture. They’re found at most big grocery stores out in the east coast, but are easy to overlook.

After grunting and sweating away peeling the annoyingly large jicama, I tossed it lightly with watermelon, lime, cilantro and a bit of jalapeno for a ridiculously refreshing salad that my blew my  bosses guests away.

Jicama and Watermelon Salad

Serves 6 as a side

1 medium jicama, peeled and cut into thin 3″ long strips (about 3 cups)
1/4 watermelon, cut into thin 3″ long strips (about 3 cups)
1/2 jalapeno pepper, peeled, seeded and finely diced
1/2 cup finely chopped red onion
juice of 1/2 lime
1/4 cup chopped parsley or cilantro

Combine all ingredients in a large bowl and chill before serving.

Summer of Salads – Beet, Parsnip and Mint Salad

Sweet beets and parsnips combine with spiced walnuts, fresh mint and smooth goat cheese.

I credit my momma for my love of vegetables; for some reason I’ve always preferred veggies over meat, and she (and her parents) were abundant in their love and attention to them as well. I learned the sweet pleasure of beets early on, and other root vegetables followed soon thereafter. While beets and parsnips may not seem like warm-weather foods, served at room temperature or chilled with bright herbs and sitting atop crisp, sharp greens, they make a hearty and colorful contrast to summer’s zucchini and cucumber abundance.

This was one of last week’s starter salads on my menu, and one that I stole a teeny tiny bowl of to keep myself fortified after a long day of cooking on my feet. It’s sweet, bright, fresh and the perfect start to an end-of-day meal.

Beet, Parsnip and Mint Salad

Serves 4 as a starter

Ingredients:

  • 3 large beets, peeled and cut into 1/2 inch pieces
  • 3 large parsnips, peels and cut into 1/2 inch pieces
  • 2 Tbsp chopped mint leaves, plus more for garnishing
  • Kosher salt or fleur de sel (or your favorite rockin salt)
  • Freshly cracked pepper
  • Awesome, nutty olive oil
  • 6 cups mixed greens or arugula
  • 1/2 cup raw walnuts
  • 2 tsp mild honey
  • 1/2 tsp cinnamon
  • 1/4 cup soft goat cheese

Heat oven to 400°. Place beets and parsnips separately on one large or two small baking sheets. Drizzle with oil to just coat, and toss on salt. Bake for 40 minutes until very roasted and slightly shriveled. Cool completely. Combine in a large bowl and toss with mint.

Meanwhile, heat a small saucepan over medium heat. Add walnuts and toast, tossing occasionally, until fragrant, about 5 minutes (watch the stove so they don’t burn!) Add honey and cinnamon, stir to coat quickly. Spread walnuts on cutting board to cool, then roughly chop into smaller pieces.

To serve, divide greens on four serving plates, making a well in the center. Divide beet/parsnips between, piling in the center.

Crumble goat cheese equally around each pile. Sprinkle with walnuts and remaining mint. Grind pepper straight on top. If desired, drizzle balsamic vinegar and a touch of oil around sides onto greens before serving.

Birthday Layer Cake for Milk Bar Mondays!

Happy Birthday Tuesday!

This is Tuesday:

Technically, today is Monday.

But today is all about a pup named Tuesday, a 10th birthday, and a Milk Bar Monday Birthday Layer Cake.

This gluten-free adaptation from Christina Tosi’s Milk Bar Cookbook is incredibly rich and buttery, shocking sweet and incredibly festive. She strove to encapsulate the joy of funfetti box cake (the Confetti Cookies from the same family were possibly my favorite of the bunch that the Milk Bar Mondays ladies have baked up). This one doesn’t quite take the prize in my mind, but as I sit here noshing on a slice with a scoop of dairy-free honey ice cream (look for it in my feature in next month’s Easy Eats magazine), I still can’t help but shake my head in “oh my dog” mode.

A layer of incredibly dense, buttery cake flecked with sprinkles
(not hard to find gluten-free).

A wash of milk and vanilla (almond milk, in this case).

A layer of frosting that truly tastes like you got it out of a tub, only a million times better.

A sprinkle of Birthday Cake Crumb.
The whole “crumb” aspect of Tosi’s work is quite genius.

Summer of Soups – Shrimp, Corn and Crab Chowder

I’m now officially out east cooking for a family for the summer, tapping my fingers away on an iPad and hoping this post comes out alright. In the few weeks since I’ve joined the private chef field I’ve had moments both of panic / anxiety and major food triumph – my cooking skills are back to where they were before going more fully into pastry, if not better.

The family loves a rich or bright soup as their first course. So after frantically packing up their apartment, heading east, unpacking, marketing and running out repeatedly for odds and ends, I threw together this soup – start to finish – in about forty minutes. Longer simmering or letting it sit overnight would have made it even better, but it was pretty darned delicious, and a great start to cooking by the water for the summer.

Shrimp, Corn and Crab Chowder

Serves 4

Ingredients

2 cans crab meat (I used one fine lump and one regular)
16 large shrimp, peeled and de-veined
3 ears of corn
3 cups fish stock plus more as needed
4 Tbsp unsealed butter
1/4 cup olive oil plus more as needed
1 large red bell pepper, diced small
1 large red onion, diced small
1 bunch green onions, sliced thin with 1/2 inch of greens
5 cloves garlic, smashed and chopped fine
6 small fingerling potatoes, peeled and diced small
Salt and pepper to taste (kosher or large-flake salt and freshly cracked pepper are best)

Directions

In a soup pot, bring oil up to a low/medium heat. Sauté onions and garlic until soft. Add red pepper and sauté until just softening. Add crab meat and toss to combine. Let simmer for 5 minutes. Add diced potatoes and stock, bring up to a low boil and reduce to a simmer. Cook for about 15 minutes until the potatoes are just softening.

Meanwhile, heat butter in a small sauce or fry pan. Cook shrimp in batches on medium/high heat, about 1-2 minutes on each side. Remove to a cutting board and cut in two or three pieces each.

Remove corn kernels from cobs, reserving cobs. In remaining butter, sauté corn on high heat in batches, cooking until crispy and slightly golden. Remove with melted butter to a boil.

When potatoes are softened but not yet mushy, add corn to soup. Stir and simmer for 5 minutes. Add salt and pepper to taste.

When ready to serve, use the sharp edge of a knife to scrape any extra raw corn kernel remains from the cobs directly into pot,then fold in shrimp and bring up to heat for a few minutes.

* Note, that scallop was leftover from what I seared for them, and therefore the little treat that topped my tiny bowl of the chowder.
