Hurricanes and Hunger

Life is such a cacophony of beauty/horror right now.

The holidays are coming, and I thrive during the holidays. There’s the beauty.

The horror is that two weeks ago my city was hurt badly. This morning I wept openly on the subway reading this article from the New York Times about the 8 who died in Midland Beach on Staten Island. The other day my buddy Johnny Iuzzini (who, like many chefs, is doing some great volunteer work out there) tweeted this video on what’s happening in the Rockaways that sent chills down my spine. I can’t stop watching it. Another video – NYC Dark – captured how eerie and foreign lower Manhattan felt during the blackout.

I’m not suffering-by-association. I’m incredibly fortunate that my apartment didn’t even lose power and I only lost two days of work from lack of transportation.

But this is my city, man. And my city is hurting.

Because of my health there are some things that I am just not able to do. Sometimes it render me feeling helpless, but I’m not even going into what they are for fear of sounding ungrateful.

I need to contribute.

So last week I did what I was able: amongst other things I wrote a series of three pieces on what a group of four chefs are doing to help out with what they’re calling the “NYC Food Flood“. The chefs (who also took big losses when their restaurants we closed due to blackouts) are taking turns bringing their skills to those in the hardest-hit areas of Brooklyn, Queens and Staten Island. The pieces – an introduction to the NYC Food Flood, a narrative on dining during the blackout at one of the chef’s restaurants and coverage of the fundraising dinner that raised over $20,000 for their efforts – went up on Serious Eats NY last week.

I also organized one on a Gnosis, a chocolate company based out of Queens that is donating 5% of profits this month to the American Red Cross for Hurricane Sandy relief, on Easy Eats magazine’s blog, which I edit.

Rise Up, New York. (and Big Apple Cupcakes)

There’s something about when the lights go out in New York City.

When restaurants are closed, Broadway stages are dark, and bridges and tunnels flooded.

I’m incredibly fortunate. Washington Heights is called the Heights for a reason in that we’re elevated, so my neighborhood wasn’t in danger of flooding – though ten blocks away and the highway below me got wiped. We passed a relatively uneventful night, the howling outside and occasional crash of something flying and falling a soundtrack to the news we couldn’t look away from and the movies we eventually distracted ourselves with. Eerily, the streets were empty. But, though it flickered, we never lost our electricity. We woke to quiet.

Everyone I know is safe, though many are still without power and a few have flooded homes.

I am very fortunate.

Anytime something strikes NYC – a madman with a gun, a massive transportation strike, a blackout, a hurricane – I become even more in love with where I live. I truly love New York City. I love the community, the diversity, the possibility. Yes, it takes energy to live here, but it gives me energy as well. It doesn’t feel like a big city at all. It just feels like… home.

So, thank you to those who are working to repair our home. To those who helped evacuated the hospitals without power and on fire. To the emergency responders who helped people out of collapsed homes, evacuated the areas in danger of being crushed by a falling crane, who worked to put out fires through floods and who are still working in teams to bring help to those in need. Thanks to those hauling away debris, washing muddy roads, pumping out the subway tunnels and working to get the millions of us without power back into the light.

My heart is downtown…

…and for all those who have made sure we’re safe and sent loving energy from Toronto, Cape Town, Denver, Tampa, California… please hug someone you love.

Because hugging is awesome. And we should do more of it.

Carrot Soup with Tarragon, Ginger and Toasted Pepitas: Private Chef-ing By the Book with Seamus Mullen

Funny story:

Last April I was soaking my arthritic bones in a deep bath full of Epsom salts and essential oils, melting away the wet of Spring, with Seamus Mullen’s soon-to-be-released Hero Food cookbook. I was interviewing Chef Mullen for my column on Serious Eats NY, and the book had been messengered over for my research. As I flipped through the intro, I was flabbergasted: Seamus has rheumatoid arthritis, a chronic immune disease that manifests with symptoms and patterns similar to my own with Lyme. I jumped out of the tub, threw on a robe and, dripping, held the book up to my roommate, with a “you’ll never guess what this cookbook is about!!”

Which was an unfair proclamation.

Because while, indeed, Chef Mullen battles RA, the book isn’t about that. It’s about delicious food that also happens to be good for you.

When I was first diagnosed with Lyme Disease at 12 years old, massive amounts of antibiotics weren’t cutting it. I couldn’t walk for a long period, I couldn’t eat, I attended school sporadically when I could, and in general my brain and body were in Lala land seemingly without end. It wasn’t until my mom found a nutritionist who put me on a strict diet, lots of supplements and IV vitamin drips that my immune system got so strong that my symptoms went away – relatively speaking – even though the Lyme did not.

Growing up with Lyme – including dealing with two serious flairs again in adulthood – taught me a lot about food. There were many I had to avoid – some incredibly strictly during certain periods but in moderation in others – and some that to this day I can’t touch. But there were also some that I needed to load my diet with so that my digestive tract, immune system and joints had a bit of extra help.

Seamus calls them hero foods.

Two decades later, I’m a private chef in a household with no dietary restrictions. Actually, I call myself a “private cook”, because a chef I am not. I am adept at making delicious things and, yes, can cook without guidance. But for inspiration and to widen my skill-set I often take advantage of my job and bring favorite books I want to explore to work with me. And as my blogging time has been diminished by my cooking, interviewing and event-covering time, I figured I should let my professions overlap when possible.

Hence this new series, “Private Chef-ing By the Book”.

It’s fitting that I’m starting with Hero Food because this time of year I’m back in the tub often. My job is physical, and I have to medicate, soak and sleep more often to battle the pain it brings my joints. 

Just reading through Mullen’s Spanish-based recipes brings me comfort; not only do I love the ingredients he focuses on (olive oil, almonds, anchovies, good eggs, good birds, parsley etc.), but reminding myself why they’re healing for me helps me connect more intimately with them, reminding me to give them more attention when I’m frantically cooking in someone’s kitchen.

In Hero Foods this carrot soup is made to celebrate summer, with gorgeous fresh carrots and a splash of citrus. But since it’s chilly and damp in NYC I’ve made a few tiny adjustments. In the original recipe Chef Mullen blanches the carrots: I’ve chosen to roast them. He tops his with yogurt: for my boss-family I stirred some creme fraiche in instead, and for my holiday dinner-party I’ll serve it with tangy goat yogurt so I can enjoy it too. And because it’s autumn now in New York City, I toasted some pepitas and tossed them in cinnamon and a pinch of sugar to sweeten the deal a bit. I adjusted some ingredients a tad and served the soup hot rather than chilled.

This soup is delicious. I’d never thought to add orange juice or zest to a carrot or squash soup, and it brightens and enlivens the rooty vegetables. Streaming in olive oil at the end emulsified it to a smooth cream. And not using chicken stock – which is my go-to for adding flavor and depth – really let the carrots remain the star and the gentle garlic, ginger and tumeric do the flavoring. And while I love tarragon and use it often, serving it on top rather than blending it in as I usually do helps it stand out rather than meld with a pluthera of equally-amazing flavors.

I’ve cooked from Chef Mullen’s book a few times already. And on top of the deep flavors I’ve created, it’s given me mindful time in the kitchen with ingredients that should be constantly in my rotation. Soon I’ll be pickling mushrooms to add to my cheese plate and pan-roasting Brussels sprouts with some (Portuguese… sorry Mullen) chorico for Thanksgiving. At work next week I’m going to make his tender lamb meatballs in a gentle tomato sauce and ricotta. And when the weather warms up again, I’m going to utilize the grill in my boss-family’s summer home to do more smoking, which I can’t do in my tiny NYC apartment.

Carrot Soup with Tarragon, Ginger and Toasted Pepitas

Based on Seamus Mullen’s Chilled Carrot Soup with Yogurt and Tarragon from Hero Food.
Serves 4-6 depending on serving sizes

Ingredients:

2 lbs carrots, peeled and cut into 1″ chunks
1/2 cup olive oil (the book specified Arebquina, which happens to be what I had on hand!)
2 shallots, finely diced
2 cloves garlic, finely diced
2 Tbsp apple cider vinegar
Zest and juice of 1 orange
1/4 tsp whole tumeric
Kosher salt Freshly ground black pepper
Creme fraiche, if desired, or whatever yogurt you can digest (or omit completely to make vegan)
About 4 tarragon fronds or 2 Tbsp coarsely chopped tarragon

For the Pepitas:

Note: Thanks go to Chef Anthony Ricco at The Spice Market, NYC, for this pepitas idea. He serves it on an incredible sweet butternut squash soup that I’ll be for Thanksgiving. His interview coming up in a few weeks on Serious Eats.

1/4 cup pepitas (small hulled pumpkin seeds)
1 Tbsp olive oil 1/2 tsp cinnamon
1/2 tsp sugar, if desired

Directions:

Heat oven to 375°.

Combine carrots and about 2 Tbsp oliver oil on a large baking tray. Sprinkle with salt, cover loosely with foil, and roast for about 30 minutes, until almost steamed and completely soft, and slightly browned on bottom. Remove to cool slightly.

While the carrots are roasting, prepare the pepitas: place pepitas and olive oil in a cold skillet and place over medium/high heat. As the temperature starts to rise stir and then start tossing until they crackle, pop and expand. When they’re equally lightly browned and full in size, remove quickly to a bowl. Toss with a pinch of salt, cinnamon and sugar (if desired – you don’t need to).

Meanwhile, heat 1 Tbsp olive oil in a skillet on medium heat. Add shallots, and cook to sweat, 1-2 minutes. Add garlic and toss quickly to warm and slightly sweat, about another minute more.

Place cooked carrots, shallots, garlic, vinegar, orange juice and zest, tumeric, and ginger in a blender, food processor or large pot (and use a hand blender). Start running the blender on high and slowly add warm water until you get to the “velvety” consistency you desire, about 2 cups. Reduce the speed of your blender/mixer, and stream in about 1/2-1 cup olive oil until emulsified and gorgeously smooth.

Adjust taste with salt and pepper, and add more acid from vinegar or orange if desired.

Pour into serving bowls and top with a dallop of creme fraiche / yogurt, a few fronds of tarragon, a swirl of olive oil and some toasted pepitas.

The NYC Wine and Food Festival (and on Not Eating At Work)

There’s something curious about straddling worlds as a food person who writes things that people (sometimes) read and pay attention to.

I’ve had these fun little allergies for a few decades now, but for the most part rarely feel deprived, as there’s a plethora of alternative ingredients to cow-dairy and gluten that didn’t exist when I was a tween battling her first bout of Lyme disease. I can ingest a small amount of gluten without killing myself, and a few times a year indulge on something really special: a local beer at a baseball game with friends on the Ohio river in Cincinnati: a piece of a hot, crusty Portuguese roll with my family. I admitted this in a blog post for Easy Eats after a and the response from the gluten-free community was mixed, with some challenging my credentials in working for a gluten-free publication and one person saying flat out that they were no longer going to follow the magazine.

So there’s that.

My piece on Tacos and Tequila rocking the hour on Serious Eats (and SWEET is up there too)

On the flip side, I interview chefs and cover events for Serious Eats NY, where I often can’t eat what is offered to me. I either pick what I can off a plate, rely on my partner (Brent Herrig, who thank dog can eat everything) or question those around me for details and opinions. So far no one has questioned my credibility to write in this world, though I haven’t called particular attention to the fact that I didn’t eat a single bite from the NYC Wine and Food Festival’s SWEET event because every single dessert offered contained gluten and/or dairy, most often both.

Seems that one world is easier to get by in and the other more serious, though curiously juxtaposed in their titleage.

I never quite how odd my absence of eating could be until covering the New York City Wine and Food Festivals Chopped, SWEET and Tacos and Tequila events. At Chopped (all the judges from the TV show Chopped dishing out at Marc Murphy’s Landmarc) I could literally only eat Murphy’s pork belly – if I just ate the meat off the bun. At SWEET – nada. I went home both nights very hungry. At Tacos and Tequila, I picked my way through (and thoroughly enjoyed) what I could. Luckily Brent has become part of my anti-allergy team and questions ingredients alongside me, warning me when not to take a bite (and refilling my tequila and soda as needed).

This doesn’t mean, though, that I don’t love straddling both of these worlds. In fact, I don’t see them as two different worlds. They’re just… well… my world. There was no “gluten-free community” or food blogs when I started on my personal relationship with watching how food affects my body. There was just me, my plate, and how my body accepted or rejected what I put on it.

So I’m still celebrating what I can eat and what I can’t. For some reason, this has resulted in my profession being creating and writing about food. And now and then accepting that maybe I’ll just have to go a little hungry… and drink some tequila and shake it on a dance floor.

New Video! Gluten-Free Boyfriend Breakup Beer Brownies

Happy Thursday Dusty Readers.

At 3:30am I woke up and music started running through my head and I couldn’t fall back to sleep. Mitra shimmied her way up the sheets, rested her head on my arm, contorted her body in the way dogs do when they demand a rubbed belly, and proceeded to snore in my face, once again proving that dogs are often more logical than humans in that when they feel something, they act on it.

I felt tired, but couldn’t fall back to sleep.

Then this video popped in my head. An hour later (after I had turned on my window fan, expelled the streetlight glow with the lowering of a blind, tied up the hair that was making my neck warm on my pillow and checked my email on my iPad) I was still awake. And while I didn’t run to the kitchen to make beer brownies at (now) 4:30am (though I’m pretty sure all of these things are in my cupboards), the recipe and this video were on the brain.

Because around a year ago I made a series of five demos for what I was/am calling The Dusty Baking Show. It was a project mulled over with an ex-boyfriend who is an incredible filmmaker. And when we broke up I was determined to make the demos anyway and not let a little heartache stop my work from progressing in a positive direction (it didn’t – a little dust in the heart is good for productivity).

Looking at it now, I wish I’d maybe put a little more makeup on. Or gotten a touch more sleep before shooting. Or pointed out that beating eggs and sugars together isn’t “creaming” when your fat is bubbling away on the stove.

But I also sorta don’t. Because my intentions with musing on what my presence could be with gluten-free baking on film was primarily to be accessible. To look like me on any given day when I’m typing at my computer in my room and don’t need to be all makeup-y and put together. To not edit the silly things I say in my kitchen (and silliness evidently happens a lot in 7 minutes).

A year after making this video, food is my day-to-day way of making a living, whether I’m writing about it for Easy Eats or Serious Eats, or in a fancy kitchen as a private chef. But re-watching this while New York City sleeps reminded me of why I love it most when barefoot, in my kitchen, with a few ingredients and a little inspiration. This recipe was originally titled Boyfriend Breakup Beer Brownies because I made them on the spot for Lil’ Sis when she had literally just gone through a breakup and I happened to be home. I didn’t use a recipe, just grabbed from the pantry and went to it. A few weeks ago Lil Sis moved south – I wish I could say “moved south for the winter” – and part of me wishes she were here, at 4:53am, so we could head into the kitchen together and make brownies.

Boyfriend Breakup Beer Brownies (Gluten Free)

Ingredients:

  • 8 Tbsp / 1 stick unsalted butter
  • 10 Tbsp cocoa powder
  • 1 cup all-purpose gluten-free flour (I used Bob’s Red Mill in the original incarnation and now use this as my go-to brownie flour blend: 1/2 cup brown rice flour, 1/4 cup quinoa flour, 1/4 cup arrowroot starch, 1/2 tsp xanthan gum)
  • 1 Tbsp mesquite flour (optional)
  • 1/4 tsp salt
  • 2 eggs
  • 3/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/2 cup dark gluten-free beer (Green’s Double Dark rocks my world)

Preheat oven to 350°. Grease 8″ square pan.

In a small bowl, whisk together flours and salt.

Melt butter on stove. Whisk in cocoa powder. Turn off heat and allow to cool slightly.

In the bowl of a standing mixer fitted with the whisk attachment, or in a large bowl with a hand mixer, beat together eggs and sugars on high speed for about 1 minute. Add beer (and drink the rest from the bottle, no matter the time of day) and beat for about 30 seconds until frothy. Slow mixer to medium and beat in melted cocoa/butter ingredients.

Stop mixer, add in dry ingredients, and beat until incorporated.

Bake for about 25 minutes, until the center of the pan is slightly fudgey but the outsides are firm. Cool for 10 minutes before slicing and devouring, preferably while watching a really funny movie.

I Chat With: Rozanne Gold, Grande Dame of the NY Food Scene

I admit, I was a tad nervous before my meeting with Rozanne Gold. It was the second of three pieces I had to do on my “day off” from cooking. I love swapping hats and going from the kitchen to the other side of the table. And I had a swanky menu (re)launch later in Brooklyn that night and anticipated that my interviewing day-wear was going to make me feel somewhat dusty amongst all the pretty people.

And then there was Rozanne… the 4-time James Beard award winner, who’s written 14 cookbooks, created menus for some of NYC’s classiest joints, and who has pretty much carved much of the food scene here into existence.

And then there was Rozanne… all warmth and friendliness. Awash with somewhat visible nerves and genuine interest in Brent and me. It ended up being a joyous two hours, and a session which I feel needs a Take Two.

Or a biography.

I’d buy it.

Don’t they all look just delicious?!?

Most of the bloggers brought a dessert to the table. I was totally on board with that. But then I started mulling on a few things…

…any kitchen-savvy mom should have a good chicken finger recipe under her belt…

…I make chicken fingers twice a week for the 13-year old in the family I work as a private cook for…

…I have yet to make myself a gluten-free chicken finger…

…adults like chicken fingers too…

…her husband is a professional baseball player… yup, makes me think of stadium food…

…Krissy loves Sex and the City. At Miranda’s baby shower, her one food request is fried chicken…

…(and, yes, I knew that without having to look it up or even think on it for more than ten seconds)…

Voilà!

I tried this version simply replacing regular Progresso bread crumbs that I use at work with a gluten-free bread crumb I found at the market. But a) not everyone can get them easily and b) they just didn’t kill it for me. I wanted a lighter, crispier crumb. So I found a gluten-free cracklebread that totally did the trick:

Light and airy, it pulsed to a good-sized crumb that didn’t dissolve when the egg-battered chicken was dredged in it, but it wasn’t so fine that it completely coated and crusted on the fry. I bought the tomato version simply because it was on sale. And gluten-free aint cheap.

Adding some basic Italian herbs to the crushed box (which resulted in the perfect amount of crumbs for 1.5lbs of chicken breast), I simply went through the basic steps I use at work and can now do, start-to-finish, in about 20 minutes: remove tenderloin from chicken breast, slice into “fingers”, dredge in (rice) flour, dunk in beaten egg, dredge in crumbs, fry on medium in canola or safflower oil, devour with ketchup and mustard. I originally made chicken cutlets for the kid this way, but was psyched when she bought the finger version – more chicken = more protein = less breading and oil.

So, perfect for a home-made replacement for fast-food chicken fingers, right? I so missed having these that I couldn’t help but snack as I shot. They will be gone by the time this post goes live.

So, congratulations, Krissy. I’m cheers-ing to baby Ezekiel with this kid-friendly classic. And while I hope he never has to deal with gluten intolerance issues, here’s a recipe to have on hand just in case you ever need it.

Gluten-Free Chicken Fingers

Makes about 16

Notes: You can substitute any light gluten-free cracker for this cracklebread – I recommend it over toasting and crumbing an actual bread. Play around with the spices as you see fit.

Ingredients:

  • 1.5lbs skinless chicken breast (there about… about 3 large breasts)
  • 3 large eggs, beaten together in a low, wide bowl
  • 1 cup of white rice flour, in a low, wide bowl
  • About 100g of a gluten-free cracker or cracklebread
  • 1 tsp kosher salt
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1 tsp garlic powder
  • 1 cup (or so) pure canola or safflower oil (or another light oil)

Directions:

In a food processor, pulse cracklebread until it makes a small but not too-fine crumb. Place in a shallow, wide bowl and whisk in salt, basil, oregano and garlic.

Open the chicken breasts to expose the small tenderloin on the side. Slip a filet, boning or chef knife through this tissue to remove the tenderloin. Cut remaining breast into about 4 spears, following cut of meat for easiest shaping. Note: it takes time to get this quickly. Just go with it. It’s just chicken. Make it look like a finger. The size and shape of the chicken breast (often determined by the quality of the chicken) will give you a varied amount. What’s most important is to get the fingers as consistent in thickness as possible so that they cook evenly.

Pour oil into a medium pan (enough to fit 4-5 with space), about 3/4″ high. Put over a medium heat and heat until it just bubbles when you drop a droplet of water on it.

Dredge each chicken piece in rice flour, then egg, then crumb and place on a cookie sheet. (I find it’s easiest to do the flour and egg with one hand and then toss into the crumb with the other, to reduce caking on real human fingers and repeated hand-washing). Repeat with remaining chicken.

Cook each piece in bubbling oil for about 3-4 minutes a side. This will vary depending on how thick your pieces are and how hot the oil is. You want the oil on the low side of bubbling so that the chicken finger has enough time to cook through without getting too dark. Check for doneness by pressing with a spatula – if it’s firm or near to it, it’s done.

Drain on paper towels and serve hot.

Scallops with Bacon, Grapefruit and Pomegranate over Fancy-Pants Pasta and On Quiet in the Kitchen

Yesterday I got into the kitchen at work and didn’t put WNYC in my earbuds. I didn’t polish silver while watching Downtown Abbey on my iPad (yes, I sometimes do this at work). I didn’t let my phone shuffle my music.

I just cooked, and listened.

After a frantic summer of cooking in the Hamptons, where my days stretched for 14 hours and I had very little – if any – privacy, coming home to cook in New York City has been a gift. Waking up in my bed, doing yoga on my floor, taking Mitra for a long walk, and jumping on the subway to go to work has taken completely new significance.

The transitions are not going unnoticed.

On September 11th, part of my job was taking my boss’ cat across town to the dentist. Yes. The animal hospital was a block from where I lived my first year in NYC, straight out of college, back in 2003. Walking by it again I found my breath catch. On this beautiful, solemn day in the city I love so much, I was given the chance to reflect on my 9 years in NYC, who I am now versus then. Back then I was an actor hungry for the stage. I lived in that 10×30 apartment with three guy-friends from college. We loved it. We worked (sorta) hard and partied (maybe too much). We had fun. We’re still all good friends. How rich and full of love and hardship my time has been since then, now a calm and seasoned 31 New Yorker.

The transitions are not going unnoticed.

On Wednesday I got a heart-wrenching phone call from a favorite friend – the kind women want to push off as long as we can. The kind where you’re immediate reaction is, “we’re too young to be having this conversation!!!”. The kind where you cry, and pray, and carry about your day with a rock in your stomach and a flutter in your heart. We talked through it, we continue to talk through it, and we’ll deal with whatever comes of it. But we’re now at that age where these conversations happen.

The transitions are not going unnoticed.

I made a lot of food in the kitchen yesterday for the family I work for, and as all this reflection was bubbling away I really let myself listen to my movements and what they created: the sound of my knife slicing through parsnips; the sizzle of slab bacon; the rush of water going into the pasta pot; the click of the dishwasher; the clang of a plate on the marble counter.

I thought of my city, my dearest friend, the person I was almost ten years ago, the cook I am after a long summer in the Hamptons.

And I made this. It’s based on a recipe in the current issue of Food and Wine. It’s sweet and salty. It’s colorful. It pops in the pan. It brings a little fun into the kitchen as you teach the 13-yr old in the house the joy of opening a fresh pomegranate and finding the seeds hidden in the pockets of the coral-like fruit. It encourages several moments of praise from your boss. It’s comforting to make in a quiet kitchen when there’s a lot on your mind.

Scallops with Bacon, Grapefruit and Pomegranate over Squid Ink Spaghetti

Serves 2

Notes: I realize squid ink spaghetti is not easily found on a grocery store shelf. I was lucky to stumble upon it and snatched it up, as I love the deep color. When I recreated this dish for myself I used a gluten-free pasta from DeBoles I had around, and it was tasty. I would suggest, however, using as fresh a pasta as you can (find dried ones in specialty markets that take 3-4 minutes to cook) as they retain a bit of texture while weighted foods are placed upon them.

Ingredients:

8-10 large sea scallops
1-2 strips of slab bacon (depending on how salty / meaty you want the dish
1 large shallot, sliced thin
1 large grapefruit, peel and all white pith removed and split into segments
1/4 cup grapefruit juice
1/2 cup light and fruity white wine, like a Sauvignon Blanc or light Reisling
2 Tbsp caper
2 Tbsp unsalted butter, cut into pieces
2 Tbsp pomegranate seeds
Your choice of cooked pasta for two, al dente

Directions

Note: the scallops take about 15-20 minutes to cook, so prepare pasta accordingly.

In a large skillet, cook bacon on medium/high until crispy. Remove to a plate.

Season scallops with salt and pepper and sear on one side for 3 minutes. Flip and sear another minute. Add shallots and toss bacon fat, scallops and shallots together. Cook for another 2 minutes, or until scallops are cooked to your preference.

Remove scallops with slotted spoon to a plate or bowl.

Add grapefruit juice and wine and cook, scraping up browned bits, for about 2 minutes. Strain grit and onions, and return to pan. Add butter and capers and cook, shaking the pan to thicken the juices. Toss scallops back in with bacon and pomegranates, and shake the pan to coat completely.

Remove from heat. Add grapefruit segments.

Serve over pasta.

Gluten-Free Pork Rind Compost Cookies – A Recipe Swap

North Carolina Pork Compost Cookies

I had two things to accomplish with only a few hours in my kitchen; bringing a gluten-free sweet treat to my sister’s going-away picnic (she’s moving to North Carolina AND THAT DOES NOT MAKE ME HAPPY) and a take on this recipe:

Christianna over at the Burwell General Store really threw me for a loop with this one. Every month for over a year now (in my case) she’s zipped along a vintage recipe to a group of bloggers that I adore. I try to stick relatively close to the original recipe, keeping it in line with the kind of dish (savory, sweet, breakfast etc.) and keeping the prominent flavors included somehow.

But… pork, fruit and cake?!?!

I stewed for a few days and, in Dusty fashion, left this to be done the day before posting with only a couple of hours in my kitchen. But I awoke that morning with a revelation:

It was time to call in a Compost Cookie.

I trotted over to the corner store with Mitra and started grabbing gluten-free snacks and… pork rinds.

At home I opened the bag and – tentatively –  ate one.

Um… I’m not quite sure I get the allure. But they totally worked in the cookies, subtly adding some earthy saltiness and helping to balance a bit of sweet. I used dried dark cherries as my fruit and starting tossing other corner-store finds and pantry staples: chocolate chips, slivered almonds, coffee, oatmeal, potato chips, kettle corn, frozen leftover chocolate cake crumb (from Chocolate Chocolate Cookies).

They were polished off at the picnic. My family indulged, my gentleman friend ate three, and they really satiated sweet/salty cravings. They’re intense – I could only have a few bites. But once again I’ve found the basic Compost Cookie recipe to be a winner.

And the best thing about Compost Cookies are they’re really a grab-and-go experience in your pantry. So take the gluten-free cookie base and weight proportions and go hog wild*!

Gluten-Free Pork Rind Compost Cookies

Built around the Compost Cookie by Christina Tosi
Makes about 20-24 cookies

I both weigh and measure my ingredients, based on which is necessary or more accurate.

Ingredients:

  • 2 sticks of unsalted butter, at room temperature
  • 1 cup white sugar (I used palm sugar)
  • 2/3 cup light brown sugar
  • 1 Tbsp corn syrup
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 75 g brown rice flour
  • 75g arrowroot starch (or tapioca starch)
  • 50g millet flour
  • 25g white rice flour
  • 3/4 tsp xanthan gum
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp salt

Compost Ingredients (totaling 475 grams)

  • 150g chocolate chips
  • 100g slivered
  • 40g gluten-free old fashioned oats
  • 5g decaf coffee / espresso grounds
  • 40g potato chips
  • 60g chocolate cake crumb (like a crushed chocolate cookie or brownie)
  • 25g kettle corn
  • 30g dried cherries, chopped
  • 25g pork rinds, crushed to various sizes

Directions

In the bowl of a standing mixer with the paddle attachment, cream the butter, sugars and corn syrup for 2-3 minutes. Scrape bowl.

Add egg and vanilla and beat on medium/high speed for 7-8 minutes. This step is vital in getting the sugars and fat to combine ideally, and will help the cookies not over-spread.

Meanwhile, weigh out flours, baking powder, baking soda and salt. Whisk together.

Turn mixer on low and add flour mixture until just incorporated, under a minute.

Add all compost ingredients on low except for potato chips, and mix until just combined. Fold in potato chips, trying not to break them.

Roll out onto parchment or Silpat lined sheets. Wrap tightly in plastic and refrigerate for at least 1 hour (this, again, is vital to them not spreading too much).

Heat oven to 375°. Bake each sheet individually for 18 minutes, or until the outsides are just starting to brown but the middles are soft. Cool on pan for a few minutes before removing to rack to cool completely.
